Meatloaf is a classic. My mom makes really good meatloaf, always with scalloped potatoes and green beans, and it’s one of my favorite meals. I like the idea of making miniature meatloaves. They cook more quickly, they’re easy to serve, they freeze like a dream, and the kids love having a whole meatloaf to themselves. Here’s how I make them:
3/4 cups milk
1 cup shredded cheddar cheese (I also like using Colby Jack)
1/2 cup quick oats
1 tsp. salt
1 lb. ground beef (you could also use ground turkey)
2/3 cups ketchup
1/4 cups packed brown sugar
1-1/2 tsp. mustard
Preaheat oven to 350 degrees F. Combine egg, milk, cheese, oats, and salt in a large bowl. Add beef, mix well. Form into 8 mini loaves.
Combine sauce ingredients. Place loaves in greased baking dish and cover with sauce. Bake uncovered at 350 degrees F. for 45 minutes.
To freeze extras, place them on a cookie sheet in the freezer until frozen solid, then place in a freezer-proof plastic bag. Thaw or defrost, make sauce, and prepare as above.
I always at least double this recipe and freeze half for later. My boys LOVE this meatloaf and ask for it all the time. It makes great leftovers, too, if you have any! I fix 8 meatloaves for the 5 people in our family, and we usually eat them all, they’re so good!
