Last Christmas, my sister-in-law, Katrina, brought an amazing appetizer to our family dinner. Her jalapeno popper spread is hot and creamy and tastes just like the inside of a popper. It’s great on crackers, red pepper strips, or even spread on top of a burger. This dish has become my go-to food to serve when we have friends over, or to take to grill-outs and dinner parties. If you love jalapeno poppers, I guarantee you won’t be able to walk away from this dish!
The recipe can be tweaked to suit your tastes, and you can lighten it up using low-fat or fat-free ingredients. Here’s my version:
2 cartons cream cheese, softened
1-1/2 cups mayonnaise
1-1/2 cups shredded cheese (I like Colby Jack)
1 small can green chile
1/2 cup chopped jalapeno peppers
Combine the above ingredients and spread into a 9×13″ baking dish. The mixture will be an inch or so deep. Sprinkle a layer of grated Parmesan cheese on the top, then a layer of breadcrumbs (I like Panko), then some more Parmesan. Bake at 350 degrees for 30 minutes or until heated through and golden on top. Serve with crackers, and sit back and wait for everyone to RAVE about your creation!
