Nutty blueberry banana muffins

There are many benefits to having a mom who’s retired. She can go with us to the pool, the lake, and the zoo. She’s available to watch the boys if I need her to. And when we stop by her house in the middle of the afternoon, she’s pulling hot blueberry muffins out of the oven. Well, that’s what happened today, anyway! The muffins were delicious, and she was nice enough to share the recipe!


1 cup sugar

1 stick of butter, room temperature

2 eggs

3 ripe bananas

1 Tbsp. milk

2 tsp. cinnamon

2 cups flour

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1/2 cup chopped walnuts

1 cup blueberries


Preheat oven to 325 degrees. Cream butter and sugar, and add eggs one at a time. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. 


In another bowl, mash bananas, add milk and cinnamon, and stir. Add flour mixture and mix just until combined. Fold in walnuts and blueberries. Pour into muffin tins and bake 25 to 30 minutes. Makes 12 muffins.
