Cowboy pork burger

Crunchy country-fried bacon, BBQ sauce-infused pork patties, sweet onions, sharp cheese, and toasted english muffins make up this stacked burger fit for a cowboy!

3/4 cup barbecue sauce
1 to 2 fresh jalapeño chile peppers, seeded and finely chopped*
1 tablespoon barbecue seasoning
1 1/2 pounds ground pork
1 large sweet onion
1 tablespoon balsamic vinegar
Olive oil
Kosher salt
6 slices sharp cheddar or Monterey Jack cheese with jalapeño peppers
Ground black pepper
6 English muffins, split and toasted
1 recipe Country Fried Bacon
Pickle slices (optional)

1. In a medium bowl combine 1/4 cup of the barbecue sauce, the jalapeño peppers, and barbecue seasoning. Add ground pork; mix gently until combined. Shape mixture into six patties slightly larger than the muffins. Cover and chill for at least 30 minutes. 2. Cut onion into 1/2-inch-thick slices. Brush with vinegar and oil, keeping rings intact. 3. Brush both sides of pork patties with oil; sprinkle lightly with salt. 4. For a charcoal or gas grill, place pork patties and onion slices on the rack of a covered grill directly over medium heat. Grill for 8 to 10 minutes or until patties are done (160°F)** and onion slices are tender and slightly charred, turning once halfway through grilling and adding cheese slices to patties for the last 1 minute of grilling. 5. Place onion slices in a bowl; toss to separate into rings. Sprinkle with salt and black pepper. To serve, spread the remaining 1/2 cup barbecue sauce on cut sides of English muffin halves. Add burgers, Country Fried Bacon, and grilled onions. Replace tops of English muffin halves. If desired, thread wooden skewers with pickle slices; insert skewers into sandwiches.
