Vegetable oil for frying, plus 2 teaspoons
1 cup milk
1 cup pancake mix
1 15.25-ounce package cream-filled chocolate sandwich cookies, such as Oreos
1. Pour oil to a depth of 2 inches in a deep, heavy-bottomed pot (preferably cast-iron) or a deep-fat fryer; heat to 375°F.
2. Whisk together egg, milk, and 2 teaspoons oil in a bowl until smooth. Stir in pancake mix until no dry lumps remain.
3. Working in batches of 4 or 5, dip cookies in batter and carefully lower into hot oil using a slotted spoon. Fry until batter is golden brown, about 2 minutes. Drain on paper towels, and let cool slightly before serving.
