Fast French Dip Sandwiches
Start to Finish: 30 minutes
1 medium sweet onion, cut into thin wedges
1 tablespoon olive oil
1 tablespoon butter
Ground black pepper
1 17-ounce package refrigerated cooked beef roast au jus
3/4 cup beef broth
4 French rolls or hoagie buns, split and toasted
Pimiento-stuffed green olives (optional)
1. In a large skillet cook onion in hot oil and butter for 7 to 8 minutes or until tender. Season to taste with pepper.
2. Meanwhile, reheat beef roast according to package microwave directions. Carefully drain juices from roast into a saucepan; add broth. Bring to boiling.
3. Using two forks, pull roast into shreds. Divide meat among 4 French rolls. Top with onions. If desired, garnish with olives on decorative picks. Serve sandwiches with small bowls of au jus mixture.
