Fresh corn salad with summer herbs

Serve this easy salad alongside grilled steaks or burgers, or double the recipe and take to a summertime potluck picnic!

Prep.: 20 minutes | Stand: 30 minutes | Makes: 4 servings

4 ears of corn, husks and silks removed
3 tablespoons snipped fresh herbs, such as chives, sage, oregano, cilantro, parsley, and/or basil
2 tablespoons chopped red onion or 1 medium shallot, chopped
1 tablespoon olive oil
2 teaspoons red wine vinegar or other vinegar
1/4 teaspoon sea salt or salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon crushed red pepper

Carefully cut corn kernels off cobs. Place corn in a medium bowl. Stir in herbs, onion, oil, vinegar, salt, black pepper, and crushed red pepper. Let stand at room temperature for 30 minutes before serving.

Per serving: 110 calories, 4 g fat (1 g saturated fat), 0 mg cholesterol, 18 g carbohydrates, 114 mg sodium, 3 g fiber, 3 g sugar, 3 g protein
