Grilled tropical fruit with cinnamon-sugar crisps and dulce de leche

Grilled pineapple and bananas are taken to a whole new level when paired with mouthwatering dulce de leche and lightly toasted coconut in this recipe.

2 teaspoons sugar
1/2 teaspoon ground cinnamon
2 8 to 10-inch flour tortillas
1 tablespoon butter, melted
1 tablespoon vegetable oil
2 medium underripe bananas, peeled and halved lengthwise
6 fresh pineapple spears
1/2 cup dulce de leche
1 tablespoon spiced rum (optional)
1 tablespoon toasted coconut

1. In a Weber One-Touch or Performer Grill, arrange medium coals in a pyramid in the center of the grill. Place Weber Original Gourmet BBQ System fitted with the searing grate over coals. Cover and preheat for 10 to 15 minutes.
2. In a small bowl combine sugar and cinnamon. Place tortillas on the searing grate. Cover and grill for 2 to 4 minutes or until crisp and brown, turning once halfway through grilling. Remove from grill. Brush both sides with butter and sprinkle with cinnamon-sugar mixture. Cut into wedges.
3. Grease the searing grate with oil. Add bananas and pineapple spears to searing grate, cut sides down. Cover and grill for 6 to 10 minutes or until brown and slightly softened, turning once halfway through grilling. Using a spatula, remove fruit from grill; cool. When cool enough to handle, cut fruit in bite-size pieces.
4. Place dulce de leche in a small bowl. If desired, stir in rum. Spread dulce de leche onto cinnamon crisps. Top with grilled fruit; sprinkle with coconut.
