Sauteed Onion and Tomato Sandwiches

If you like, substitute sweet Vidalia or Walla Walla onions or red onions for the regular onions in this colorful sandwich.

Start to Finish: 20 minutes

2 medium onions, sliced
1 teaspoon olive oil
8 slices hearty whole grain bread
Honey mustard
3 small tomatoes, thinly sliced
4 lettuce leaves, shredded
Small fresh basil leaves
4 ounces spreadable Brie cheese or soft-style cream cheese

1.  In a large skillet cook onion slices in hot oil over medium-high heat for 5 to 7 minutes or until tender and just starting to brown. Remove from heat; cool onions slightly. Meanwhile, if desired, toast bread.

2.  To assemble, lightly spread 1 side of each of 4 bread slices with honey mustard. Top with onion slices, tomato slices, lettuce, and basil. Spread 1 side of each of the remaining bread slices with Brie cheese; place on top of sandwiches, cheese sides down.
