18 colorful veggies and tomatoes to try

Flipping through the Burpee Seed Catalog gave us a ton of ideas for bright-colored vegetables we want to be growing in our gardens. Here are some of our favorites this year.

    Big rainbow tomatoes

    This giant tomato variety is an heirloom that matures in about 85 days. You'll recognize it from afar with its eye-catching yellow color and scarlet highlights.

    Watermelon radishes

    This incredibly unique variety of radish has a white outer layer with an electric purple burst of color inside. Produce is only three to three and a half inches around and has a mild, sweet taste. After about 60 days, radishes will be ready for harvest. They do best when grown summer into fall.

    Tweety peppers

    These precious hybrid mini-peppers are great for instant snacks! Pop one in your mouth or use them as crunchy little serving dishes that you can also eat. Plants grow 24 to 32 inches tall and have peppers ready after 70 to 75 days.

    A tasty, nutty flavor makes this fun-shaped broccoli variety especially noteworthy. Its heads are apple-green and hold onto that color when cooked. Romanesco broccoli is normally enjoyed crisp and raw after 75 to 100 days.

    When these little hybrids get about three inches across, they are ready to be harvested and eaten. Buttery yellow with scalloped ridges, this type of summer squash is both delectable and darling. Give them 50 to 55 days to reach maturity.

    For tiny carrots, these two to three inch hybrids are packed full of flavor. You'll know them by their deep orange color and can harvest them at 57 days. The little carrots are great for containers!

    Fairy tale eggplant

    This award-winning plant produces four to five inch eggplants in clusters of six. After 50 days, you'll find these gorgeous purple fruits with pearly etchings on their skins.

    Yellow pear tomatoes

    These mini tomatoes are only an inch and a half in size and are canary yellow. If you're a fan of hors d'oeuvres, these bite-sized tomatoes are perfect for making them and will provide a great tangy flavor. Give them 75 days before harvesting.

    Nikita peppers

    These sweet pepper hybrids are crisp and delicious with lovely sunset coloring. Peppers hold their shape, even when cooked, and are three inches in size. Nikita hybrids mature in 65 to 70 days.

    Cosmos squash

    These hybrids are six to eight inches long, one inch wide, and bright yellow. Few spines make them simple to harvest and their pleasant, nutty flavor makes for a delcious taste no matter how it's cooked. Strong and high-yielding bushes produce these bright summer squash hybrids that mature after 60 days.

    All blue potatoes

    Although the potatoes are blue, when they are cooked their color fades a bit. All blue potatoes have meaty flesh that is particularly delectable when mashed. Give spuds 90 days to mature, then collect the many medium-sized potatoes.

    Red candy onions

    These red onions have beautiful skins that almost look lacquered they're so perfect. Any recipe that needs a little color would welcome this hybrid sweet and mild onion. Harvest at 95 days for the most flavor.

    Gold mine beans

    These very sweet yellow beans grow in large clusters on high-yielding bushes for easy picking. Beans are typically five to five and a half inches long and mature after 55 days.

    Sweet thing peppers

    Plants that grow 24 inches tall produce these spindly and colorful sweet peppers. They can be anywhere from six to nine inches long and have a sweet taste with a smoky note to it. As they grow, they turn from green to red and are mature after 68 days. Sweet thing peppers can substitute for thin-walled, grilling or dried peppers in recipes.

    Bonita sweet potatoes

    Normally sweet potatoes are colorful, but this variety is known for its white flesh being the very sweetest because of its high sucrose content. With the flesh color of traditional potatoes and faint pink skin, though, you can shock guests by serving them potato dishes made from these exceptionally sweet potatoes instead of regular potatoes. What a fun surprise!
