Canning end-of-season vegetables
Canning summer produce is a practical way to make sure you enjoy the benefits of your garden throughout the year. There are two basic canning methods: water bath and pressure canning. Regardless of which method you choose, however, it's important to make sure you're using quality canning equipment. If your processing equipment is faulty, you risk contaminating your canned goods with bacteria that could cause foodborne illnesses. It's also a good idea to inspect your canning jars careful before you begin your project. Toss any jars that are cracked or chipped, soak the jars in a solution of one cup vinegar per gallon of water to remove mineral deposits, and purchase new lids each year.
