Grow Microgreens This Winter

These small, easy-to-grow plants pack a strong flavor and provide the perfect indoor veggie supply year-round.
  • Small Plant, Big Appeal

    Microgreens are the young, edible shoots of salad vegetables like Swiss chard, arugula, cilantro, and other herbs and leaves. These young buds have much higher concentrations of vitamins and nutrients than their full-grown counterparts. Microgreens are ready for harvest at a young age and can have their stems snipped (not pulled) after two to three weeks of growing. They're easy to grow on your windowsill at any time of year - which makes winter cooking that much more appealing!

  • What You'll Need

    • 3-inch peat pots or similar containers
    • Soilless seed-starting mix
    • Vermiculite
    • Seeds
    • Plant labels
    • Plastic wrap

  • Step 1: Dampen Soil

    Get a soilless seed-starting mix, a mix formulated to help seed development. Moisten the mix by sprinkling it with warm water and blending it until thoroughly damp. 

    Fill small containers with the moist seed-starting mix. Don't pack it into place to avoid drainage issues. Set your containers on a tray to keep water from dripping onto your work surface.

  • Step 2: Settle Seeds

    Sprinkle seeds evenly over the surface of the mix in each container. Spread them more thickly than you normally would, and leave at least 1/4 inch of space between the seeds.

  • Step 3: Cover Up

    Stick labels in each container so you know what seeds are where. Cover the seeds with a mineral-based material like vermiculite to slowly release water. Planting depth instructions will be on the seed packet, and vary by plant.

  • Step 4: Water Well

    Water your containers so vermiculite is soaked, but without washing away the seeds. Water lightly to keep the seed-starting mix damp until the seeds germinate and shoots sprout up.

  • Step 5: Cover

    Covering containers with a lid or sheet of plastic will keep humidity in and promote seed growth. Set the tray of containers on a heat mat or pad.

  • Step 6: Take Care

    When the seeds start to sprout, remove the cover and heating pad. Set the containers on a sunny windowsill and keep the planting medium damp by watering from the bottom. Pour water into the tray and let the plant mix absorb it.

  • Step 7: Harvest

    Hold a small section of microgreens in one hand and snip from the base with scissors. Keep the harvested greens in a cool, airtight container until usage. Refrigerated shelf life is about one week.
