Fresh Peach Salsa

Chill: 1 to 2 hours
Ingredients:
3 cups chopped fresh peaches
1/4 cup chopped sweet onion
3 tablespoons orange juice
1 fresh jalapeno chile pepper*, seeded and finely chopped
1 tablespoon snipped fresh cilantro or fresh basil
1 clove garlic, minced
Directions:
1. In a medium bowl, stir together peaches, onion, orange juice, jalapeno peppers, cilantro, and garlic. Cover and chill for 1 to 2 hours. Makes 12 (1/4-cup) servings.

*Tip: Because chili peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chili peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
